The perfect winter dessert, nothing like combining Oreos & peppermint!
Ingredients:
3 cups crushed Oreos (divided)
1 stick of softened butter
4 (8oz) packages of cream cheese at room temp
1 1/4 cups sugar
4 eggs at room temp
2 teaspoons peppermint extract
1 cup white chocolate chips
1 cup peppermint crunch (in the baking aisle, by chocolate chips)
*whipped cream to garnish
Directions:
Preheat oven to 350
Lightly spray your springform pan
In a food processor pulse 2 cups crushed Oreos with softened butter
Press this mixture in the bottom of pan
Beat with an electric mixer, cream cheese and sugar until smooth. Add in eggs and beat until just combined, then beat in peppermint extract. Finally, stir in white chocolate chips, peppermint crunch and 1 cup crushed Oreos.
Pour batter into pan on top of crust
Bake at 350 for one hour, allow to cool in oven with door propped open for 20 minutes before removing and cooling completely on the counter. Cover and refrigerate for at least 4 hours or up to 2 days.
(I put a cookie sheet topped with tinfoil on the rack below my cheesecake to prevent a mess in the oven from the butter in the crust! )
When you’re ready to serve, remove the side off springform pan and top with whipped cream and extra peppermint crunch, crushed Oreo or even crushed up candy cane!
