Just like that Ruby is six. Now that she’s in kindergarten… and SIX, she seems like a big kid all of the sudden. Ruby is the sweetest kid in the world and can always brighten my day; she is just a joy to be around. On her birthday we celebrated by going skiing in the morning and to a movie that night.
Sunday, we went to a local horse barn with a few girls in her class for horseback riding lessons and games; we had so much fun!
The perfect winter dessert, nothing like combining Oreos & peppermint!
3 cups crushed Oreos (divided)
1 stick of softened butter
4 (8oz) packages of cream cheese at room temp
1 1/4 cups sugar
4 eggs at room temp
2 teaspoons peppermint extract
1 cup white chocolate chips
1 cup peppermint crunch (in the baking aisle, by chocolate chips)
*whipped cream to garnish
Preheat oven to 350
Lightly spray your springform pan
In a food processor pulse 2 cups crushed Oreos with softened butter
Press this mixture in the bottom of pan
Beat with an electric mixer, cream cheese and sugar until smooth. Add in eggs and beat until just combined, then beat in peppermint extract. Finally, stir in white chocolate chips, peppermint crunch and 1 cup crushed Oreos.
Pour batter into pan on top of crust
Bake at 350 for one hour, allow to cool in oven with door propped open for 20 minutes before removing and cooling completely on the counter. Cover and refrigerate for at least 4 hours or up to 2 days.
(I put a cookie sheet topped with tinfoil on the rack below my cheesecake to prevent a mess in the oven from the butter in the crust! )
When you’re ready to serve, remove the side off springform pan and top with whipped cream and extra peppermint crunch, crushed Oreo or even crushed up candy cane!

Tonight we started a new tradition… jammie cocoa Christmas! I read about the idea on one of my favorite blogs and I wanted to start the tradition for my family too. It’s so easy, and we had so much fun! Starbucks and Christmas lights, doesn’t get much better than that 🙂
Late this fall the kids had a fun indoor photo session with Meghan Elizabeth Photography. We did a few in ‘fancy’ clothes and finished up with pj’s! Each year, my mom buys the kids Christmas pajamas and that’s something I’ll always remember about these little years.. so it was fun to get pictures of them in matching jammies to kick off the Christmas season!
