I saw this recipe on Jillian Harris’ blog and I knew I had to make it immediately. I usually make a latte in the afternoon for a little ‘pick me up’ and when I read this one was made with banana and coconut it was love at first sight. Now, I look forward to this little cup of heaven each afternoon.
I made one batch of the banana coconut puree and it fit into 2 small mason jars. You only use 5 tablespoons of the puree per latte so these little jars have lasted me a while.

Ingredients
1 can of full fat coconut milk
1 ripe banana
2 1/2 tablespoons sugar
1 cup soy milk
1 shot espresso
Instructions
In a blender, add entire can of coconut milk, banana and sugar. Blend until smooth and creamy. Transfer to mason jar and refrigerate until ready to use.
Add 5 tablespoons of banana-coconut puree to a carafe to steam/froth. Add 1 cup soy milk and heat until creamy and smooth. Make your espresso (or strong coffee) then add the hot puree to your coffee. Stir and enjoy!
