These 3 ingredient “cookies,” if you can call them that 😉 are so easy and use only 3 ingredients (4 if you add frosting!) . These are perfect for kids to make- Beau put them together all by himself and I only needed to step in when it was time to put them in the oven. This recipe uses a box of cake mix, eggs and vegetable oil- you can even get all these ingredients at some gas stations if you’re desperate. I love having things on hand the kids can make because it keeps them busy for a bit and the mess contained to the kitchen. It’s March 1st and we are getting MORE snow… I had groceries to put away so Beau grabbed his apron and went to town! If you’re looking for something to do inside this weekend, try these!
*These are super sweet and I wouldn’t necessarily make these if you’re craving a good cookie or dessert…. I mean, I ate one obviously 😉 but just a heads up– they are more FUN for the kids than anything!
Ingredients
1 box cake mix (Possibilities are endless here! We used Betty Crocker Party Rainbow)
2 eggs
1/3 cup vegetable oil
*Frosting (Again, whatever sounds good! We used Betty Crocker Rainbow Chip)
Directions
- Preheat oven to 375
- Mix together the eggs, cake mix, and vegetable oil
(If your kids are making these have them crack the eggs first in case you need to fish out any egg shells 😉 - Roll out 8 balls of dough (about the size of a golf ball) and place on a cookie sheet covered with either parchment paper or a non-stick baking mat
- Bake cookies for 11-12 minutes
- Remove from oven and immediately transfer to a cooling rack
- Let cookies cool and then frost away! You could even top with sprinkles if you have those on hand (and feel like vacuuming).
These cookies are crispy on the outside and soft like cake on the inside. 3 ingredients and kids can make them… win / win! Happy baking 🙂
